Pantry Challenge

Over at  good cheap eats  she has a challenge every January on eating from our pantry. As she puts it is a way after all the overspending we did last month, it's time to save some from spending on groceries. If you go to her blog you'll get more info on how she goes about it with some good tips. I had forgotten about it until I saw her post for today and I have been doing this for 4 years now.  past post Well even tho it's the 2nd day, it's not too late and in a way without trying I have already been doing it seeing how I have been eating what we have on hand. Took a pork roast out for New Years day dinner with sides I already had. I had gone to the store last week so I'm good for a while with milk, eggs and fresh produce. Update on Winter Pantry Challenge

The challenge has been going on for not quite 2 weeks but I have to take a furlough from it for a week, seeing how I'm not home. But I think I did pretty well for the 10 days of working on eating just what we had in the pantry and freezer. Example of some of the meals I made, first meal I took a roast our of the freezer to use in a stew. Seeing how I didn't have any stew meat left, I would just cut up a roast. I used only half of it with some potatoes, onions I grew and some carrots and celery I had in the frig. That lasted us 2 nights. The leftover roast I cooked in my Instant Pot, which I love by the way.  It does so much more than a average pressure cooker. Used the meat in Taco's one night, added some to Spaghetti Sauce I had canned and use one of the Spaghetti squashes I had grown. I had a very good year for Spaghetti squash last year. From one roast had 5 meals. Made a batch of Butternut soup, Lentil soup and Taco soup which I had most of the ingr

Upcoming events this week

There are 2 events coming up that I wanted to share with you. First one is the Pantry Challenge  over at Good Cheap Eats. Jessica challenges us to eat from what we have in our pantry instead of going out and buy. I have been doing her challenges for the past couple years and I love the challenge. You need to go to the link above to her site and get tips on taking inventory, menus and recipes. It's a month long deal and the rewards are using up food that needs to be and not being toss out cause its too old and other good thing is seeing how much money you can save. I need to do my inventory still, that is on tomorrow "to do list" The second event is the Oklahoma Wildlife Winter Bird Survey. So if you live in Oklahoma maybe you might consider joining in. Doesn't matter where you live, whether you're in town or out in the country. It starts Thursday the 8th. I am loaded up with bird feed and have been putting it out for a time now to encourage
